Established nearly a hundred years ago, the Zallo company is based in the Basque town of Bermeo, Spain, the most important fishing port of the region. White tuna and anchovies are fished from the Cantabrian Sea right at Zallo's shores.
The Tuna is caught one by one with hook in the Bay of Biscay from June to October.
