Rainbow trout has a sweet, mild, slightly nutty flavour that can win over even the fussiest fish eater. Fillets are quick cooking, and the meat is moist, has a small flake, and a delicate texture - it is one of the everyday favourites on our counter.

Cooking Methods:
Pan-fry in butter, slow-bake at 200 degrees in a preheated oven, poach in aromatic broth, or steam in parchment 'en papillotte' style.

Additional Information:
Kolapore Springs Fishery is Canada’s first organic trout farm, situated in one of the most unique eco-systems in the world. The spring-fed farm has a fish population that is controlled; the feed is all natural and supplemented with freshwater shrimp, mayflies, minnows, and mosquitoes. The forest stream is always moving and the water is considerably colder than most commercial farms, making for healthier fish. The fish are harvested using dip nets. The farm is in the process of opening facilities to produce their own organic feed. Kolapore trout take upwards of 24 months to come to size, naturally.

Raw form + sizing details:
Fillets are skin on and pin-bone out. Each fillet weighs approximately 12-14 oz and are sold by the piece or side, rather than by the pound.
