These species of sardines (Sardina Pilchardus), known in las Rias Gallegas as “Xouba” are known for having an extra touch of fat. Due to their delicate size, they are carefully hand cleaned one by one, then toasted to achieve a texture that sets them apart. Preserved in olive oil, and packed in this beatiful art-driven design.
