Red Fish || Salmon & Friends

We know Salmon is a Canadian favourite.
The salmonoid family includes salmons, trout and char.

Salmon get their orange flesh from a diet high in crustaceans. This beautiful species is known for high in Omega-3 and protein content. You can feel good digging into a fillet for dinner.
When cooked, the flavour is sweet, while the meat is tender and succulent with medium flakes. 

Whole Salmonids roast or grill well for a small dinner party.
Dredge fillets in flour and pan-fry in bacon fat or butter and finish with plenty of chopped garlic. Try poaching a salmon whole and serving cold with malt or herb mayonnaise or a pungent vinaigrette.
