Wild Salmon is an amazing thing, truly a gift of nature.
We are fortunate in Canada to have access to wild pacific salmon from early May to mid fall each year.
At this time in the year, we are looking for small catches that are approved by the Dept of Fisheries and Oceans as the assess the size of the stocks for the current year. These "test" fish as they are called, are perhaps the best of the year. They are line caught in open water off the BC coast while they are at their peak of fitness - strong and well fed in preparation for their spawning run.
Spring Salmon is also known in Canada as Chinook or in the US as King Salmon.
Cook this fish almost anyway; great on the grill, oven roasted or pan fried.
